Whole, makes a great roast for family gatherings. The Top Round is the best cut of the round because it is velvety in texture. When seasoned, roasted and allowed to rest prior to carving it, it is juicy and flavorful. Best if oven roasted and carved in thin slices across the grain. Calculate ½ lb. of beef per person prior to cooking.
