New York Strip Steak
Also known as Top Loin Steak, this boneless steak is the same long muscle found on the Porterhouse and T-Bone Steaks. It is fine in texture yet firm with ample tenderness (although not as tender as the Filet Mignon).  It is full flavored and second only to the Rib Steak for marbling. It is best grilled or skillet cooked.
